Broccoli – Sprouting Riccio di Scarno

Brassica oleracea var. cymosa. A variety of broccoli with shoots or sprouts originating from the Sarno region in southern Italy. The term “riccio” in Italian means “curly” and aptly describes its medium-sized, serrated leaves. It is grown for its tender leaves and stems, as well as for its unopened flower buds, which resemble mini broccolis featuring a subtle bitterness that balances the sweetness/flavor profile. A progressive maturing variety, Riccio di Sarno prefers cool seasons and is sown in early spring or late summer.

Growing tips
Germination conditions:
- sowing depth: 5 mm
- optimal germination temperatures: 21 to 27ºC
- germination time: 5 to 10 days
When to sow:
- Indoor sowing 8 weeks before the last frost date in your area or
- Direct sowing 2 weeks before the last frost in spring for a late harvest or
- Direct sowing at the end of summer for an autumn harvest
Sowing technique: in cluster
Sow 3 to 5 seeds in the same hole, spacing them 1 to 2 cm apart; when the seeds have germinated and the seedlings have reached a height of 5 cm, keep all the plants if space is available or keep only the best ones.
- For indoor seedlings: harden the plants outdoors before transplanting them into the garden.
- For direct sowing: thin the plants for their final location in the garden.
Transplanting outdoors (for indoor seedlings):
- when all risk of frost has passed.
Distance in the garden:
- between plants: 45 cm
- between rows: 60 cm
Plant height: 60 to 90 cm
Soil: moist, rich, and well-drained
Exposure: full sun
When to harvest: 60 days for the main head, 90 days for side shoots.
How to harvest:
- Cut the main heads when the flower buds are large but still green and closed (just before they open into small yellow flowers). This encourages the plant to produce smaller secondary shoots (up to three more harvests), thus extending the season.
Specificities:
- Under optimal conditions, a plant should produce for about 4 weeks.
- Riccio di Sarno can be grown in pots.
- The appearance of small yellow flowers will mark the end of the plants’ production.
- Biennial plant grown as an annual.
