Celeriac – Giant Prague

Giant Prague is a variety of celeriac that produces a white, parsley-flavored, potato-textured root that is ready to harvest when it is 10-15 cm in diameter. The bulb is the star ingredient in classic celery remoulades and is also delicious mashed or fried. The petioles and leaves are very fragrant and can be used to flavour broths or salads. The roots keep well in a cool place.

Growing tips
Conditions of germination:
- depth of sowing: 3 mm
- optimal temperatures of germination: 15 to 24 ºC
- time for germination: 14 to 21 days
When to sow:
- indoor sowing 8 to 10 weeks before the last frost date in your area
Sowing technique: in pocket
Inside the same hole, sow 3 to 5 seeds spaced 1 to 2 cm apart; when the seeds have germinated and the seedlings have reached a height of 5 cm, keep all the seedlings if space is available or keep only the most beautiful ones. Transplant into individual containers while waiting for transplanting in the garden.
Transplant outdoors:
- When all risk of frost is removed and the air is warm (10ºC and above).
Distance in the garden:
- between plants: 25-30 cm
- between rows: 45 cm
Height of the plants: 40 cm
Soil: well drained, humid, rich
Exposure: full sun
Maturation (from transplanting): 110 days
Specificity:
- Protect young plants in spring with a floating cover if cutworms are present in the garden.
