An annual plant native to the Andes, quinoa can be sown directly in the garden around the last frost date or 3 to 4 weeks indoors to get a head start on the season. The Cherry Vanilla variety produces pretty pink and cream colored panicles in late summer. A pseudo-cereal, quinoa is actually the fruit of a plant that belongs to another botanical family that includes Swiss chard and spinach; the young leaves can be eaten like spinach, in salads or just cooked.

Growing tips
Conditions of germination:
- depth of sowing: 5 mm
- optimal temperatures of germination: 18 to 24 ºC
- time for germination: 5 to 12 days
When to sow:
- Sow indoors 3 to 4 weeks before the last frost date in your area, then transplant after acclimating the plants, after the last frost.
OR - direct seeding around the last frost date in your area, when the soil is warm but still cool (quinoa is cold tolerant)
Sowing technique: in line
- Draw a line in the ground, then sow the seeds every 10 cm. Thin out to 30 cm when the plants have 6 true leaves.
Optimal temperatures of culture during the growth of the plant: 12 to 20 ºC
Distance in the garden:
- between seeds: 10 cm
- between plants: 30 to 45 cm
- between rows: 45 to 60 cm
Height of the plants: 100-150 cm on average, sometimes up to 180-200 cm according to the conditions of culture
Soil: well drained and variable, adapts to different types of soils (sandy as well as loamy)
Watering: moderate, drought tolerant
Exposure: full sun

Specifics:
- Quinoa is ready for harvest when the grains begin to detach from the inflorescences. Cut the panicles and dry them indoors, upside down, in the shade. After drying, beat them over a large bowl or into a large paper bag to free the grains from the plant remains (husks). Strain into a colander and repeat the cleaning steps until the grains are clean.
- Rinse the grains thoroughly under water to rid them of the saponin otherwise they will taste bitter.
