Black salsify or scorzonera Meres is a Dutch variety prized for its long, cylindrical black roots (20-30 cm) with a slight nutty flavor. Harvest before the plant comes into flower for a bitter-free salsify. Peel before eating like parsnips, blanched, oven-roasted or in soups. Sow in spring and harvest late in fall. Good resistance to mildew.

Growing tips
Germination conditions:
- sowing depth: 1.5- 2 cm
- optimum germination temperature: 15 to 22 ºC
- germination time: 7 to 21 days
When to sow:
- direct seeding as soon as the soil can be worked or soil temperature remains above 15ºC
Sowing technique: in rows
- Draw a line in the soil (in a pot or in the ground), then sow the seeds in it.
Distance in the garden:
- between seeds: 2.5 cm
- between plants: 10 to 20 cm
- between rows: 30 cm
Plant height: 50 to 70 cm
Soil: loose, well-drained and rich
Exposure: full sun
Days to harvest: 150 days
Specificities:
- Thin out after germination when seedlings have 3 true leaves or are 5 cm tall.
- Perennial plant grown as an annual. However, in zone 5 and above, you can leave some roots underground and mulch for winter protection. In spring, these early vegetables can be dug up and eaten.
