Native to France and cultivated for over a century, Viroflay spinach produces large, dark green, 25 cm leaves on plants up to 60 cm in diameter. Even at maturity, its leaves remain tender and have a delicate, low acid taste. However, it can be grown and eaten as young shoots.

Growing tips
Conditions of germination:
- depth of sowing: 1.5 cm
- optimal temperatures of germination: 5 to 22ºC
- time for germination: 7 to 14 days
When to sow:
- direct and successive sowing every 3-4 weeks when the soil can be worked in spring until September
Sowing technique: in line
- draw a line in the soil (in a pot or in the ground) then place the seeds at the indicated distance according to the variety or according to the desired harvest (young or mature plant)
Distance in the garden:
- between plants: from 5 cm (for small leaves) to 25 cm (for larger leaves)
- between rows: 30 cm
Plant height: 25 cm
Soil: fertile and well drained
Exposure: full sun or light shade
When to harvest: 25 days for young leaves, 45 to 50 days for mature leaves
Specificity:
- Cut young shoots as you need them or when they reach 10 cm to encourage more leaves on the plant during the season.
- Frost tolerant.
