Cardoon is a vegetable that originated in the Mediterranean basin where it has been cultivated since the Middle Ages and where it remains popular. It is a close relative of the artichoke, whose stalks are eaten instead and whose taste is reminiscent of that of the artichoke, but also of salsify, parsnip and celery. To consume the cardoon stems, remove the silver-gray serrated leaves and remove the threads by peeling them before cooking them. Delicious au gratin, creamed, browned, fried in tempura.

Growing tips
Conditions of germination:
- depth of sowing: 5 mm
- optimal temperatures for germination: 18 to 26ºC
- time for germination: 10 to 21 days
When to sow:
- Sow indoors 8 to 10 weeks before the last frost date in your area, preferably in peat pots
Sowing technique: In a single hole, sow 3 to 5 seeds spaced 1 to 2 cm apart; when the seeds have germinated and the seedlings have reached a height of 5 cm, keep all the seedlings if space is available or keep only the best plants.
Transplant outdoors:
- Harden off seedlings outdoors before transplanting them into the garden after the last frost.
Distance in the garden:
- between plants: 60-90 cm
- between rows: 120 cm
Height of the plants: 90-120 cm
Soil: moist, rich and well drained
Watering: moderate
Exposure: full sun
Harvest time (after transplanting): 75-150 days
Seed life: 1 to 2 years
Specificity:
- Harvest the leaves by cutting them with a knife a few inches above the ground.
The beautiful plants, which are very popular in ornamental gardens, have an upright stem with serrated leaves that need a lot of space. Do not exceed two plants per square meter. If the stems are not harvested, the plants will produce pretty purplish-blue flowers. - Perennial in zones 6-10.
