To grow white and yellow endive, or chicory, the root of the plant must be forced. After sowing chicory seeds in the spring, the plant will produce green foliage. In early fall, when it begins to wilt, dig up the roots and force them out. See our growing tips for more explanations.

Growing tips
Conditions of germination:
- depth of sowing: 5 mm
- optimal temperatures for germination: 16 to 22ºC
- time for germination: 7 to 14 days
When to sow:
- indoor sowing 4 to 6 weeks before the last frost date OR
- direct seeding when the soil can be worked in spring
Sowing technique: in pocket
Inside the same hole, sow 3 to 5 seeds spaced 1 to 2 cm apart; when the seeds have germinated and the seedlings have reached a height of 5 cm, keep all the seedlings if space is available or keep only the most beautiful ones.
- for indoor seedlings: transplant into individual containers while waiting for transplanting in the garden OR
- for direct seedlings: transplant to their final location in the garden
Transplanting outdoors (for seedlings started indoors):
- When all risk of frost is removed
Distance in the garden:
- between plants: 10 cm
- between rows: 30 cm
Soil: rich and well drained
Exposure: full sun or light shade
When to harvest: 110 days
To force chicory roots: cut off the foliage (it can be eaten but is very bitter) leaving 1 cm at the end of the roots. Store the roots in a humid sand or peat moss container in a cool place for 6 to 10 weeks. Then force the roots into a tray filled with potting soil, in the dark, maintaining an average temperature between 10 and 15ºC. The chicory should be ready for harvesting 3 to 4 weeks later.
