Shiso is a herbaceous plant with round leaves and a cut edge. It is also called perilla. It is very popular in Asian cuisine, and is also used in traditional Chinese medicine. Its taste is complex; it is at the same time minty, aniseed, sour, astringent. Green shiso is said to be more pronounced than red shiso. Like basil, shiso or perilla prefers sun and warm temperatures and if pinched regularly, the flowering will be delayed and the plant will be bushy and very ornamental.

Growing tips
Conditions of germination:
- depth of sowing: 5 mm
- optimal temperatures for germination: 18 to 22ºC
- time for germination: 7 to 21 days
- Soaking the seeds for a few hours in warm water can accelerate germination, but is optional.
When to sow:
- Sow indoors 4 to 6 weeks before the latest date in your area OR
- direct seeding after any risk of frost in spring, when the soil is warmed up
Sowing technique: in a row
- Inside the same hole, sow 3 to 5 seeds spaced 1 to 2 cm apart; when the seeds have germinated and the seedlings have reached a height of 5 cm, keep all the plants if space is available or keep only the best plants.
- for indoor seedlings: transplant into individual containers while waiting for transplanting in the garden
Transplanting outdoors (for seedlings started indoors):
- When soil is warmed, after any risk of frost.
Distance in the garden:
- between plants: 25 cm
- between rows: 30 to 45 cm
Height of the plants: 30 to 60 cm
Soil: well drained, humid, rich
Exposure: full sun, tolerates light shade
Maturation: 60 to 70 days, but leaves can be harvested as soon as the plant is well established, a little more than a month after sowing
